I don’t know what others thinks of Valentines Day, but honestly I don’t really care for it. To me, it just feels forced. It is not romantic and it’s an excuse for girls to get things they don’t need, from stressed out boyfriends/husbands/lovers that probably would prefer to be having a beer while watching TV. Also why is Valentines usually about the girls in the relationship? Guys are the ones that usually go out of their way to please. Not fair, in my opinion.

Yesterday and the day before, I had at least 10 different people ask me, what me and my husband were planning for V-Day. When I responded with a “Nothing” the majority looked confused. I have never really celebrated it and now that I am married I believe I don’t need a day to celebrate the love I have for my man. I think we do it every day :D! (cliché, but true) So, like I would any other day, I made us a yummy dinner with a recipe I found on Pintrest (my new favorite site). It is more of an appetizer, but if you make enough and pair it with your drink of choice (we made Piña Coladas!), it’s a fun yummy treat for you and your family.

Warning: it’s a time consuming recipe, but I think it’s worth it!

Buffalo Wing Wontons
1 – 8oz package cream cheese at room temperature
3 large chicken breasts cooked and finely shredded
¼ cup blue cheese crumbles
¼ cup franks wing sauce
2 green onions finely chopped
1 package wonton wrappers (about 50 – 60 sheets)


  1. Preheat oven to 400º F.
  2. In a mixing bowl, add cream cheese, chicken, blue cheese crumbles, franks sauce, and chopped green onions. Combine until thoroughly mixed.
  3. In a small bowl ads some water and set up your assembly station (wonton wrappers, chicken mixture, water bowl, baking sheet).
  4. To assemble, place ½ TBSP of the chicken mixture in the center of the wonton. Rub a little water around 2 of the edges and fold to make a triangle. Press the edges tightly to seal them. If the mixture comes out of the seam, you know you have a little too much filling in there, use a little less of the mixture. Next fold one corner into the center and the other corner on top of that. Add a little water to the corners before you fold them in order to secure them in place.
  5. Place on a parchment lined baking sheet. Repeat step 4 for the next 59 wrappers.
  6. Bake for 15 – 20 minutes until the outside is golden brown.
  7. Serve with blue cheese dipping sauce.

Note: If you have any leftover chicken mix, you can use it as dip or add it to you eggs in the morning, it makes them extra special!

Blue Cheese Dipping Sauce:
¼ cup sour cream
⅛ cup heavy cream
4 ounces blue cheese
½ teaspoon hot red pepper sauce
¼ teaspoon Worcestershire
¼ teaspoon salt

In a small bowl mix all the ingredients thoroughly and refrigerate until serving.

Frozen Piña Coladas:
4 oz Rum (Pick your favorite!)
6 oz Coconut milk
12 oz Pineapple juice
2 TBSP Sugar (We use brown cane sugar)
Ice to taste

In a blender add all the ingredients and blend until the mixture is smooth.
